Until now! I found this recipe in my Fitness magazine (May 2011 issue). Too bad just reading the magazine doesn't give me the "hot beach body" they advertise. I made these the other night. I let them cool on a cooling rack then put them in the fridge. It was easy to heat them up in the morning before work and top them with real maple syrup or peanut butter.
"In a blender, combine 1 banana, 1/4 cup rolled oats, 2 tablespoons low-fat cottage cheese, 2 egg whites and 1/2 teaspoon vanilla extract; blend until smooth. Stir in 2 teaspoons chopped walnuts. Heat a large skillet over medium heat and coat with nonstick cooking spray. Pour batter into skillet to make two 4-inch pancakes; cook 3 minutes on each side. Drizzle with 2 teaspoons maple syrup."

I added a little cinnamon to mine. I didn't have walnuts on hand so I used pecans. This is great for those bananas that are over ripe and spotted. I hate eating bananas like that so I usually make banana bread. This is a great alternative!
